Today is
National Cheesecake Day,
so therefore, a celebration is in order!
What’s that? You don’t have any cheesecake?
You don’t want to go to the effort to make one?
No problemo!
I have a recipe that only calls for 5 things, and you can make it in about 10 minutes.

These ingredients may not be the exact ones you’re used to, but let me tell you why I use them:
- The Greek Cream Cheese has more protein and less fat than regular
- La Lechera is the exact same as Eaglebrand, but it’s usually a dollar cheaper(!)
- Using fresh lemon juice is so important!
The quality and flavor make a big difference, especially when using a Meyer Lemon!
- Keebler Graham Mini Pie Shells are perfect to use for little desserts

1 package Greek Cream Cheese
1 can La Lechera Sweetened Condensed Milk
⅓ cup fresh Meyer lemon juice
2 packages Keebler Tart Shells
Assorted fresh berries
Using a hand mixer, blend the greek cream cheese well till smooth. Add the milk and blend well. Pour in lemon juice and mix till combined. Spoon equal amounts into tart shells. Top with berries. Refrigerate a couple of hours to set.
