Get Well Salad – feeding a cold and a hungry tummy!

Achooooooooo!

This week I have had a head cold. It was pretty giant, and it’s almost over…however I must admit I’m very fortunate: the last time I had a cold was 26 months ago. I think a lot of that has to do with my choice of eating free range, grass fed, organic, etc…  snoopy
Anyway, Tuesday night was the first day I really felt like cooking. But, I just wanted something to make me feel better. My body was craving fresh yummy produce, so I started pulling things out of the fridge, grabbing things from the fruit bowl, and here’s what I came up with:
I’m calling it “Get Well Soon Salad”. Kinda catchy, isn’t it? Oh wait, I don’t mean that kind of catchy… 

Okay on with the recipe (full recipe is at the bottom):
The first thing I did was I cut up a nice free range organic chicken breast into bite-size pieces. I began to sauté it in some olive oil, and then added some powdered ginger, and a little pinch of salt.

 After seasoning with ginger and salt, saute the chicken and apples in pineapple juice

 I kept working it around in the pan, and once it was cooked through, I added a large splash of Trader Joe’s pineapple juice. I really love that stuff! Then I added an unpeeled chopped organic green apple. I kept cooking the mixture together until all of the liquid evaporated.

 

Then I grabbed a bowl and put on some fresh Romaine lettuce.Get Well Salad part 1

 

On top of that I added some of the chicken and apple mixture.Get Well Salad part 2

 

Over that, I added some peeled and cut mandarin oranges, and some cut strawberries.Get Well Salad part 3
 

 

Next, I sliced and diced some banana and put that on top of my lovely salad. Get Well Salad part 4

Yum! To finish my “get well salad”, I added a liberal splash of white pineapple balsamic vinegar, and a good size drizzle of one of my favorite local raw honeys.Get Well Salad part 6
The taste was outstanding, and I am so glad that I had some leftovers for yesterday’s lunch!

If you have been reading my blog for even just a little while, you’ll notice that I like to make “salads” out of all kinds of strange items. I just love the idea of layering a lot of fresh fruits, veggies, or even meats and cheeses… To come up with my own special little bowl of happiness.

Get Well Salad

Get Well Salad (Makes 2)

 

1 free range,  organic boneless skinless chicken breast, cut into bite sized pieces
½ teaspoon (or more) powdered ginger
pinch of salt
1 organic green apple, chopped
½ cup (or more) Trader Joes Pineapple Juice
½ head organic romaine lettuce, washed & torn
4 organic mandarin oranges, peeled & diced
8 organic strawberries, hulled & diced
1 organic banana, diced
2 Tablespoons cashew halves
2-3 Tablespoons (per salad) White Pineapple Balsamic Vinegar
2 Tablespoons organic local honey

Sauté chicken in olive oil, adding ginger and salt while cooking. Stir occasionally till cooked through. Add juice and apples. Continue cooking till liquid evaporates. Meanwhile, divide lettuce between 2 bowls. Top with chicken/apple mixture. Add the next 4 ingredients. Drizzle with vinegar and honey.

  1. Wow…. sounds SO yummy…. can’t wait to try it. [I probably won’t be able to resist adding roasted sunflower seeds …. I’m addicted to them on salads!
