You know… the kind where there’s no real scientific cooking involved?
I had that kind of craving the other day, and so I found myself on a mission. By the time I’d left work and parked at Trader Joe’s, I knew exactly what I wanted. I was in for a sandwich… but not a little foo-foo sandwich. I wanted something substantial. So, of course, like most great ideas, it started with bacon.
Trader Joes Ingredient Roll Call: Nitrate-Free Apple Smoked Bacon, Fig Butter, Brie Cheese, Organic Granny Smith Apples, and Sourdough Bread.
The results?
Savory, sweet, crispy, creamy, crunchy, and smooth.
All in the same bite.
Cut thick slices from three 2½” diameter Granny Smith apples, and cut out the center core. You can use a small round cookie/donut cutter, or be like me: I used an aluminum bottle capCut about 2/3 of a package of nitrate-free bacon into thirds and place in large frying pan. Then turn up the heat to medium high. Cook till browned and flip over to cook the other side to brown.Move bacon to paper towel to drain. Keep drippings in frying pan.Sauté apple slices in bacon drippings. Oh, yes.Toast the sourdough slices in the broiler: 1-2 minutes on each side till golden.Spread Trader Joes Brand fig butter or fig jam on all 4 pieces of toast.Divide bacon between two pieces of toast.Divide apples (over bacon) between same two pieces of toast.Add brie pieces over fig, on remaining toast pieces. Pop back into the broiler for a minute or two, till the brie melts.Put it all together.Oh. Yum….. Yum, Yum, Yum. That is all.
Update: My nephew in Australia saw this blog yesterday and decided it looked pretty tasty… so here’s what I saw on Facebook this morning…

I love this post! I make this sandwich with the same Trader Joe’s products. You have a better idea about how to slice the apples than I do, but other than that, my guys get the same ingredients. I use Morningstar Farms veggie bacon for mine and always make sure I buy brie at Joe’s made with vegetable or microbial rennet. 🙂
We’re now in an area that doesn’t have a Trader Joe’s nearby…..we SO miss going there & need to make a trip “down the hill” & stock up on all our favorites. Thanks for the ideas of what to stock up on the next time we make a visit.
I truly need to try this wonderful sandwich. I’m hungry.
