So…You’ve been thinking about making some kind of dessert, but you’re not sure which to do. Cookies? Cake? Cinnamon Rolls? hmmm. You search through your worn cookbook, but nothing seems to pop out at you.
Then you glance at a few books, but the ones that sound really good require a lot of ingredients you don’t have on hand.
Has this ever happened to you? What do you do? Do you make the same old thing, or do you resort to buying something at the grocery store?
I have something that requires a short amount of time, with ingredients you may already have sitting in your kitchen. It’s moist, not too sweet, and tastes like a cross between a moist cake and an apple pie. Interested?
This recipe comes from my mom’s very good friend Jean, who I grew up knowing as a super-nice, genuine woman, with more friends than I think I could count :)Every time my parents would visit her, I’d hear about how delicious Jean’s cooking was. Needless to say, when I got this recipe, I didn’t hesitate to make it. Good call! Oh YUM!
I have changed it up a tiny bit, by replacing the oil it calls for. Generally you’d use a vegetable type oil, but since I discontinued using them for health reasons (which I recommend everyone look into), I use only coconut oil when I bake.

For the last month, I’ve been using this particular coconut oil exclusively. I got it free from the company, and I wanted to use it a lot before I recommended it. It’s important for me to like and trust a product before I can suggest that anyone else try it. Anyway, I am actually really impressed with the quality, so I can completely endorse it. It is a Certified Organic Virgin Coconut Oil from a company called Tropical Traditions. This particular oil has a slight coconut flavor, so when paired with this apple dessert, it’s a real treat!
After you’ve read through this recipe, I’ll tell you more about the giveaway. Really!
But for now, let’s make some cake!
By the way, this dessert tastes best after two days (so the moisture of the apples will really get into the cake). So, you can make it in advance, rather than rushing on the day you want to serve it. Yay!
Jean’s Raw Apple Cake
4 c. peeled & diced Fuji apples (or any other apple you love)
1½ c. sugar
2 c. flour
1 cup pecans (you’ll be chopping these)
1½ tsp. baking soda
2 tsp. cinnamon
1 tsp. pink salt
2 eggs, beaten
⅔ c. coconut oil, melted but not hot
(Opt. Whipped Coconut Cream)
Preheat oven to 350º.
Line a 9″x13″ pan with foil. Brush surface of foil in pan with coconut oil. Set aside.
Peel, halve, core, and dice apples.
Make sure not to cut them too small – you want those good sized chunks in your cake!
Once you have 4 full cups’ worth, add the white sugar and stir gently to cover all apples.
Let this mixture sit at least 5 minutes.
While it’s sitting, chop pecans with a sharp knife.
(I like them hand chopped, rather than with a machine,
because I like the rustic look/taste of the various sizes of nuts and apples.)
Meanwhile, in another bowl, mix flour, baking soda, cinnamon and pink salt.
Add those dry ingredients to the apple/sugar mixture.
Melt coconut oil in microwave until it’s liquid but NOT hot*. Add beaten eggs to the coconut oil.
*(This is because you’ll be adding the beaten eggs to it… and unless you want egg soup, you’ll make sure the oil is just barely warm)
Gently stir oil/egg mixture into apple mixture.
Pour into prepared pan and bake for 40-60 minutes. It’s done when a toothpick inserted in the cake’s center comes out clean.
It’s tough, but try to resist the urge to dig in. Yes, it’s good, but it really needs to cool.
Once it’s cooled off, carefully lift out cake by having your dessert-deprived child assist you by having each of you hold two corners of the foil, and lifting the cake out of the pan and onto a countertop. Flatten the foil, and you’ll be able to easily cut into squares.
When serving, I highly recommend topping your cake with my Whipped Coconut Cream.

We had a spring blizzard last week and I made a twist on the famous chocolate no-bake cookies!
Instead of cocoa, use dark chocolate cocoa,
Instead of butter or oil, use coconut oil,
Instead of vanilla, use almond extract,
Instead of peanut butter, use almond butter,
Then add maybe 1/2 cup coconut and now you have
“Almond Joy No Bake Cookies”

Hey Sockmonkey! What I would use the coocnut oil for would most definitely be to eat it straight from the jar! I mow through a gallon of Tropical Traditions in a little over a month, just with a spoon!

Thanks for the giveaway!! I already use tropical traditions coconut oil when I fry, but I would also use it in my vanilla coconut muffins, my chocolate chip cookie mix, and anywhere else I could get away with it without my kids noticing a big difference. I’ve been using the oil as my facial moisturizer for a few months, and I just introduced my husband to it. It worked wonders a few weeks ago when my face and shoulders were sunburned. I also plan on making deodorant and toothpaste with tropical traditions coconut oil when I run out of my current products! So many wonderful uses for it!
