Bacon Makes Everything Better


My son Chris loves meat. He’s a big-time carnivore, actually. And, bacon is his favorite.
Earlier this week he had a bad cough, so I did what any good mom would do: I wanted to feed him. What is it with moms and wanting everyone to eat our food?
Anyhow, I wanted to make him something kind of special to make him feel better, so I came up with this simple, yet tasty appetizer idea. I call it “Bacon Chicken Spirals”:

• 6 boneless chicken thighs
• 1 package fully cooked bacon
• black pepper to taste
• baguette, sliced into 15 – 1″ rounds
• 2 Tbsp. butter, melted
• condiments to taste

Preheat the oven to 350°

Cut chicken into 1″- 2″ pieces. Divide the chicken into 15 portions.

Lay the first piece of bacon down, and place 1 portions’ worth of chicken on top of it. Starting from the top, roll it toward you. You don’t need to roll it too tight, but just enough to where the chicken won’t fall out. Secure with a metal skewer at the last end of the bacon. Lay on a foil-lined baking sheet. Repeat this step till all meat is used.

Sprinkle with black pepper. You can also try other seasonings as well, like perhaps garlic 🙂

Bake for 15 minutes. While these are baking, line a second sheet with foil. Lay out the baguette rounds and brush them with a light coating of butter. Set aside. Using tongs, flip over each little spiral and bake for another 15 minutes. If they are crispy, take them out. If not keep them in while you turn the oven to the Broil setting. Keep an eye on them! Place the bread in the oven on another rack.
This should take about 2 minutes or less, to get a good golden toast on it. Don’t overcook!

Remove pans from oven and lay on baking racks or on the top of the stove.
Remove skewers.

First way: Toast, topped with BBQ sauce, spiral on top.
Second way: toast, topped with spiral, dipped in Balsamic/EVOO
Third way: However you’d like to serve it! 😀
